Cavicchioli 1928 Prosecco DOC, Miol Treviso and Torresella are crisp, dry Italian bottles that suit an Aperol spritz, while Bottega Gold in its gilded bottle is the one to bring out for a birthday or a hen party on Paradise Island. Sperone Prosecco is a good value pick for a big group and Josh Prosecco Rosé adds a splash of pink for a sunset toast. Serve prosecco properly cold, around fridge temperature, in a bucket of ice, and open bottles one at a time so the last glass is as lively as the first. Allow one bottle per two or three guests for a toast.
